With quarantine being in full swing right now, In-room dining has actually just been re-shut-down where I live which means that 4th of July would also be somewhat modified this year. Welcome to the Pandemic world where beaches are closed, you need to wear a mask everywhere you go (pls, pls do) and gatherings are being strictly prohibited.
This is for our safety and I am all for it, which brings me to another point: What the hell do I make for my Netflix-binging self and my family for this holiday when we’re used to barbeque and parties in the past?
Enter this easy Mushroom Burger recipe I am going to share with you. Serve it as a side to your steak and hotdogs, or even as a main dish. This recipe has been a household staple, it’ll make your non-veggie eating friends into converts. 😉 It’s so easy you don’t even need a grill! Well you can if you prefer but I personally broil this baby in the oven and it always turns out so perfect! 👌This recipe is also healthy and guilt-free you can even make it gluten and dairy free if you prefer. Easy Mushroom Burger Recipe
4 Portobello Mushrooms (Medium to Large size)
1/4 cup Extra Virgin Olive Oil
4 tablespoons Balsamic vinegar
1 tablespoon minced garlic
1 tsp dried Basil
1 tsp dried Oregano
Salt and pepper to taste
(optional) Sprigs of fresh Thyme or any fresh herbs you desire
(optional) Cheese slices (non-dairy if you prefer- I like Chao)
(optional) Hamburger buns (bun-toasting recipe below)
1) Wipe the mushroom caps (do not wash just wipe clean) smooth side up and set aside. In a large deep bowl, whisk together Oil, Vinegar, Basil, Oregano, Garlic, Thyme (or any fresh herbs if you have it) and some salt and pepper. Pour the mixture over the mushrooms and let it marinate for at least 15 mins. Make sure the mushrooms are well-coated on both sides.
2) Turn oven on to Broil (High)
3) Place mushrooms on top of a wire rack over a baking tray, smooth side up. Brush the mixture over the mushrooms. Reserve the rest of the liquid for later. Cook for 15-16 mins total (about 5-8 mins per side), turn mushrooms over halfway and brush more of the marinade.
4) Let cool and place a cheese slice if preferred. If it’s too hot the cheese will melt on the burger which isn’t really a bad thing 😉
Serve while warm with Hamburger buns or plain with veggies or better yet some fries.
To toast your Hamburger buns:
I prefer brioche buns (not pictured) as they are soft and soak up the mushroom flavor better. In a moderately heated pan, I melt sum butter (about a teaspoon). then toast the buns on both sides for about a couple of seconds, any longer and it will burn your buns. 😱
I always add ketchup/mayo and/or some aoili if I have some and some greens on my burger. This recipe is also good for Meatless Mondays or any day of the week! 😊
